Chococococafe muffins
I really enjoy making muffins. They are one of my favourite treats and also go down very well at the gym or with my family and friends who request them prior to my visits!
I also love dark chocolate, coconut and coffee …..COFFEE IS MY FAVOURITE!!!!!
So I decided a recipe combining these wondrous C’s must be created and in that lovely little cakey form!
So here is the recipe for these moist, caffeinated little yum bundles! They are clean eats but a treat none the less so eat responsibly!
Ingredients:
- 1 Cup Coconut Flour
- ½ cup Almond Flour
- ½ cup coconut oil (8 tbsp)
- 6 x Eggs
- ½ cup (8 tbsp) Organic Honey
- 1 cup of strong coffee
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla essence
To make
- Preheat your oven to 175
- Mix all your wet ingredients in one bowl
- Mix all your dry ingredients in another
- Combine and mix them all together well by hand is fine
- Put in muffin cups and muffin tray and bake for 25 mins at 175 and 10-15 mins at 165
- Let cool and add your choccy topping
Topping ingredients
- 1 large bar of 85 % dark chocolate
- 2 tablespoons of coconut milk
- ½ tablespoon of coconut oil
- 1 tsp vanilla essence
- Desiccated coconut to sprinkle on top
Method
- Get a small pot ½ filled with water and bring to the boil
- Have all your ingredients in a ceramic/glass bowl (cereal bowl perfect)
- Place over the water /pot and melt all ingredients together
- This will form a thick chocolate mix
- Spoon on top of your cooled muffins and spread over the top
- Sprinkle on coconut and ET voila!
