A delicious moist and sweet loaf that is simple, veggie friendly and gluten free!

Perfect to share with friends and family along with big mugs of tea or coffee.



  • 3 ripe bananas
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon maple
  • 1/4 cup coconut oil
  •  2 cups blanched almond flour
  • 1/2 teaspoon celtic sea salt
  •  1 teaspoon baking soda
  • Juice of 1 lemon
  • 2 Tablespoons of chia seeds


  • Chop up your bananas and pop them in your mixing bowl
  • With a fork mash the bananas well
  • Beat 3 eggs with a fork and pop them in with the bananas and mash again
  • At this point you can pop in your coconut oil, maple  and vanilla essence giving it a mix through with your fork
  • Squeeze in the juice of 1 lemon and stir it well through
  • Now add your 2 cups of almond flour , baking powder chia seeds and salt
  • Mix it all through well and pop into a loaf tin that you have greased with coconut oil. Make sure it is well greased to prevent sticking
  • Pre heat your oven to 175 degrees
  • Bake at 175 for 30 mins then reduce the heat to 165 for 20 mins
