Zucchini bread ( courgette bread)

How to get more veg into your diet? Put it in a cake 😋 This zucchini bread has the veg, the protein and  is gluten and dairy free💪🏼 The zucchini makes it moist, however you can’t even taste it’s there. Perfect as a pre or post workout snack or for that afternoon slump

1 cup almond flour
1/2 cup brown rice flour
4 eggs
1/3 cup honey
1,1/2 small zucchini (or one medium)
Lemon zest 1/2 lemon
1 tsp baking powder
2 tbsp melted coconut oil
Pinch of salt

Mix dry ingredients in one bowl and wet ingredients in the other. Shred zucchini and add to the mixture. Bake in a loaf tin on 180 for 30-40 mins (toothpick rule)
