Quick coconut cookies

Easy peasy delicious coconut cookies you can make in under 15 minutes with only 5 ingredients! 

Gluten free,vegetarian and refined sugar free too. 

Ingredients :

  • 1/2 cup of coconut oil melted
  • 3/4 cup of coconut flour
  • 1 x scoop of your preferred protein , I used vanilla whey
  • 1 x tsp of vanilla essence
  • 4 tablespoons of maple syrup

Method :

  • Take a large bowl and add your coconut flour
  • Pour over your melted coconut oil
  • Add your maple syrup and vanilla essence
  • Mix thoroughly with a spoon
  • Line a baking tray with parchment
  • Make 12 little balls with the mix and place onto the parchment ( They will be oily)
  • Press each ball lightly with your thumb to make a little flatter
  • Pop into a pre heated oven at 180 fr 10 minutes or until golden brown
  • You could also pop these into cupcake holders and bake to be fancy as well 🙂
