Barbelle Banana Bread



This banana bread recipe is so simple but so good! Refined sugar, gluten and dairy free! Its yummy just as it is or with your favourite nut butter on top! It can even be treated like cake with dollop of yogurt as a healthier dessert or snack .  I love it with a nice cup of tea or coffee!

I sometimes mix it up and add pecans or raisins to the mix . It’s a fantastic base recipe to play around with . It’s also delicious with or without the cinnamon or nutmeg , but I love them as they make it taste like Christmas!


  • 3 ripe bananas
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon maple
  • 1/4 cup coconut oil
  •  2 cups blanched almond flour
  • 1/2 teaspoon celtic sea salt
  •  1 teaspoon baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg


  • Chop up your bananas and pop them in your mixing bowl
  • With a fork mash the bananas well
  • Beat 3 eggs with a fork and pop them in with the bananas and mash again
  • At this point you can pop in your coconut oil, maple  and vanilla essence giving it a mix through with your fork
  • Now add your 2 cups of almond flour , baking powder and spices /salt
  • Mix it all through well and pop into a loaf tin that you have greased with coconut oil
  • Pre heat your oven to 175 degrees
  • Bake at 175 for 30 mins then reduce the heat to 165 for 20 mins
  • Perfect banana bread ready to enjoy!
