Barbelle Tzatziki and Guacamole

2 for 1 this week with my savoury creations using this fab product!
These are the perfect accompaniment to BBQ meats or as burger toppings or dips for veggie crudités. I served it with my lemon chicken (recipe coming soon) and salad.
I took 2 classics and made them that bit lighter using Glenisk 0 % Greek yogurt. The tzatziki is a fairly classic recipe while the Guacamole is lighter and creamier using the yogurt which I think is a really nice twist. Also the addition of this yogurt adds a protein punch to your fave dips too!
Guacamole
Ingredients
- 2 x Ripe Avocados
- 100 grams Glenisk Greek %
- 1 tsp of coriander ( dry leaf works best or add fresh if you prefer )
- 1 tsp lime juice
- 1 clove of garlic
- Salt and pepper
- ½ tsp of cumin
The method for this is so simple. Pop it all into your bullet blender and blend to a nice thick dip texture. Pop it into a bowl and sprinkle a little cumin and coriander on top to make it look pretty!
Add extra garlic or a chili of you want a stronger flavor or spicy kick!

Tzatziki
Ingredients:
- 300 grams of Glenisk Greek 0 % yogurt
- Juice of half a lemon
- 2 cloves of garlic
- Tsp Olive oil
- 1 cucumber
- Sprinkle of paprika
Method:
- Peel and deseed your cucumber then grate it onto a cloth or a few good quality kitchen paper towels
- Squeeze out excess water and pop into a bowl
- Add the juice of half a lemon and a tsp of olive oil
- Now add 2 cloves of garlic grated or pressed
- Add your yogurt and stir it all through
- Sprinkle paprika on the top and you are done!
