Crockpot Shredded Beef with warm salsa
So simple, healthy and tasty! Fantastic to prep for friends coming over or as meal prep for 3- 4 days!
Beef Ingredients
- 1 x kg approx of beef (what you would use for a Roast or pot roast)
- ¼ cup of your preferred stock- I use organic low sodium gluten free veggie stock
- ½ tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 2 tsps Oregano
- 5 tsp chili powder
- ½ tsp paprika
- 1 tsp cinnamon
- 1 tsp garlic powder
- 1 tsp turmeric
- 2 tbsp Tomato paste
Warm Salsa
- Skimmed stock from beef
- 1 red onion
- 3 cloves garlic
- ½ tsp salt
- ½ tsp pepper
- 4 tomatoes chopped (approx ½ cup chopped tomatoes heaped)
METHOD:
Beef
- Pour your stock into the bottom of the crock pot and add the tomato paste
- Put the beef into the crock pot and sprinkle all of the spices and herbs on top of the roast
- Cook for 4.5 hours on high setting
- Take the juice from the crock pot and let it cool so you can skim any heavy fat off the top
- Remove your beef from the crock pot and shred it with 2 forks
Warm salsa
- Put your meat juices in a pan bring to a simmer
- Add garlic and red onion and let simmer for 5 mins
- Add salt and pepper and chopped tomatoes
- Take off the heat and blend to a thick sauce consistency ( like a passata)
Then you are all done and dusted – Serve!
I love this with avocado/guacamole and salad on a Be Free wrap or use gluten free buns
