Peanut Butter Fudge
Paleo, vegan, gluten free, refined sugar free, simple delicious and adaptable fudgy goodness!
Play around with this base recipe to create your own flavor by adding mint oil or more cocoa. Add nuts, dried fruit or cacao nibs for texture. I also make a protein fudge with this base by adding banana whey, it’s truly delicious!
Ingredients 1 Batch approx 20 pieces
- ½ cup coconut butter( buy this or do as I do and make your own- I blend approx 200 grams of desiccated coconut with a table spoon of coconut oil )
- 8 tablespoons of peanut butter – sugar, salt and palm oil free butter / smooth
- 2 tablespoons of honey ( you can reduce this to 1 the flavor is still awesome and sweet , maple syrup will also work)
- 1 tablespoon vanilla essence
- 1 tablespoon dark cocoa powder
Method
- So easy to make, just add all your ingredients to a pot and heat it up on a medium heat till it all blends evenly and smoothly. Do not bring it to the boil; it’s just to make it warm and easy to blend.
- Get yourself a tin or I use a square Tupperware but any container will do.
- Line it with parchment paper and pour in your mix
- Freeze for 2-4 hours then remove, chop into squares and keep in the fridge. s
