Cashew Coconut Blondie’s

As my brownies turned out so well sure I had to attempt a Blondie! I have a shocking cashew butter addiction so I felt I should use my fave nut butter for more purposes than eating it by the spoonful! Coconut and vanilla seemed natural companions to add to these lovely little treats.photo (53)

Ingredients:

  • 2.5 cup of coconut flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 eggs
  • ½ cup coconut oil
  • ½ cup cashew butter
  • ½ cup honey or maple syrup ( I use ¼ cup of each )
  • 5 tbsp Vanilla essence
  • Desiccated coconut 2 tablespoons

 

Method:

  • Add your dry ingredients to a bowl ( flour , baking powder, salt )
  • Make a well in the centre then start adding your wet ingredients stirring as you go
  • Coconut oil should be melted before you add it
  • Add eggs honey/maple  and keep stirring
  • Add cashew butter and vanilla essence and keep stirring the thick doughy mixture
  • Make sure it’s all thoroughly mixed through
  • Grease a 8 x8 approx dish with coconut oil then add your mix evenly
  • Sprinkle the desiccated coconut on the top
  • Pop into a preheated oven at 180 and bake for 25 minutes
  • Done and dusted
  • Let them rest for at least 15 mins then slice and serve!
  • Mix makes 18 blondies

FAT: 13 grams

PROTEIN: 4 grams

CARBS: 19 grams
