Sweet Potato and Bacon Savoury Muffins

Bacon – enough said!

These tasty little savoury snacks are great on the go, after training or even as breakfast or lunch
(with a big salad)

Ingredients (Makes 12 muffins)

12 slices of bacon ( don’t use bacon that’s thick cut , normal rashers or streaky even

pancetta work for this recipe but if using thin pancetta layer it)

 2 large sweet potato

 3 eggs

 1 small bunch spring onion ( diced small / you can use red onion diced small too)

 2 tsps coconut oil

 Bunch of chives

 Salt and pepper to taste

Method

 Pre heat your oven to 200 degrees

 Grate your sweet potato

 Whisk up your eggs and combine with sweet potato and chives evenly and thoroughly then

salt and pepper to taste

 Grease a muffin tin with your coconut oil

 Lay your bacon slices into each muffin section

 Fill these up with sweet potato mix

 Top with spring onion

 Bake for 45 mins
