Festive Muffins

Muffins are my fave treat. Easy to make, sweet cakey little wonders! So versatile with flavours, toppings, mixes etc. Play around with the recipe.

This works really well with or without the fruit and you can reduce the honey if you want to lower your carb intake a bit more.


3 bananas

3 eggs

1 tablespoon vanilla extract

1 1/2 tablespoon honey

1/2 cup coconut oil (use some for oiling pans) 8 tablespoons

2 cups blanched almond flour

1/2 teaspoon Celtic sea salt

1 teaspoon baking soda

Tsp cinnamon

Tsp nutmeg

Mixed fruit of your choice I use raisins , cranberries and currants

So get yourself a good mixing bowl, I do this one all by hand as it’s so simple and doesn’t require much finesse which suits me down to the ground!

Wet ingredients first starting with the bananas , mash them up really good then whisk your eggs with a fork and put them in with the banana , bit of mashing again at this point. Then add your honey, vanilla extract and coconut oil (microwave it if it’s hard) at this stage us some of the coconut oil to oil your muffin tray or if you are using muffin cups this is unnecessary

Now one by one starting with your flour add all the remaining ingredients into the mix. Mix it all up well and pop into your muffin tray/ cases.

This will be enough for 12 muffins

Preheat your oven to 175 and bake at this for 20 mins then reduce to 165 and bake for 15 mins
